Frozen Fish: Sardina pilchardus

Sardine is found in the Atlantic Ocean to the Mediterranean Sea and is caught primarily off the coast of Spain, Morocco, Portugal, and along the east coast of South Africa. Sardines are small, silvery pelagic fish very similar in appearance to small herring. Her back bluish-green, sides and belly silvery white, but the color fade quickly after catch, leaving the whole fish silver. Basically sardine grow up to 15-20 cm, rarely up to 25 cm. Catches in the western Mediterranean of about 250 000 tons, and in the northeast Atlantic of 700 000, together with lower production areas contribute to total more than million metric tonnes yearly commercial catch. Sardine is widely used for canning, smoked, frying and preserves production.
