Yellowfin Tuna (Thunnus albacares) is a popular species of tuna found in pelagic waters of tropical and subtropical oceans worldwide, and is often known as Ahi, a term from Hawaii. Although, mostly found in deep offshore waters, they are highly migratory and are capable of coming close to the shore when suitable conditions prevail.

Frozen Fish: Yellow croaker Fish

Native to the northwestern Pacific, particularly the Yellow and East China seas, this fish is highly prized among Asians in Los Angeles, especially the Koreans. In Korean markets they are sold frozen, dried, salted cooked and sometimes fresh, usually in lengths less than 12 inches. They are often called "Corvina" (Spanish for croaker) or "Yellow Corvina" to avoid confusion with the other fish called Yellow Croaker. This is the only fish allowed the name "Yellow Croaker" on Fishbase. They are easy to tell apart. This one has a round face, the other has a pointy face. The photo specimen, purchased from a Los Angeles market serving mostly Vietnamese and Chinese, was 13-1/4 inches long and weighed 1 pound 2-1/2 ounces. This fish is caught wild and not considered threatened.

Tilapia is the common name for nearly a hundred species of cichlid fish from the tilapiine cichlid tribe.

Tilapia are mainly freshwater fish inhabiting shallow streams, ponds, rivers and lakes and less commonly found living in brackish water. Historically, they have been of major importance in artisan fishing in Africa and the Middle East, and they are of increasing importance in aquaculture and aquaponics.

Tilapia can become problematic invasive species in new warm-water habitats such as Australia, whether deliberately or accidentally introduced, but generally not in temperate climates due to their inability to survive in cold water.

Frozen Fish: Sardina pilchardus

Sardine is found in the Atlantic Ocean to the Mediterranean Sea and is caught primarily off the coast of Spain, Morocco, Portugal, and along the east coast of South Africa. Sardines are small, silvery pelagic fish very similar in appearance to small herring. Her back bluish-green, sides and belly silvery white, but the color fade quickly after catch, leaving the whole fish silver. Basically sardine grow up to 15-20 cm, rarely up to 25 cm. Catches in the western Mediterranean of about 250 000 tons, and in the northeast Atlantic of 700 000, together with lower production areas contribute to total more than million metric tonnes yearly commercial catch. Sardine is widely used for canning, smoked, frying and preserves production.

Frozen Fish: Pacific ocean perch

Ocean perch is mild tasting yet a bit sweet, with a moderately firm texture. The meat is lean, moist and flaky. Large ocean perch develop a coarse texture.

Deep-skinned ocean perch with the fat line removed has the most delicate flavor. The flesh is white, though not as light as cod, and it turns opaque white when cooked.

This is the whole fish as it comes out of the sea. Removing the head and gut is the easiest way to prepare this fish. If you wish to fillet it then take one cut with a sharp knife from the back of the pectoral fin down and along the spine finishing at the tail. Trim the belly bones and if you're really fussy tweeze out the pin bones that run from the neck to the middle of the fillet. Here we offer 1kg, about 2-3 fish. If no fresh is available we will send frozen.
